Ingredients
- 2 eggs โ 2 protein blocks
- 65 g skyr โ 1 protein block
- 165 g cherry tomatoes โ 0.5 carb block
- 35 g quinoa โ 2.5 carb blocks
- 1 tsp olive oil โ 3 fat blocks
- 10 g avocado โ 1 fat block (increased because of the skyr)
- A little yellow pepper, a handful of arugula, parsley โ not counted
Dressing
- 1 tsp mustard
- A little olive oil
- Salt
- 1 garlic clove
- A little water
Instructions
- Cook the quinoa according to the package instructions.
- Boil or fry the eggs as preferred.
- Chop the tomatoes, pepper, and avocado.
- Combine all ingredients in a bowl.
- Mix the dressing ingredients and pour over the salad.
- Garnish with arugula and parsley.
